This herb butter recipe started with my brother, who would always make compound butter for his Thanksgiving turkey. It was so good that I created my own version, which I now use for my Air Fryer Turkey Legs, my Mac and Cheese—and honestly, on just about everything else during the holidays.

This simple herb butter recipe with roasted garlic, fresh rosemary, thyme, and chives is perfect for elevating your Thanksgiving meal. Rich, flavorful, and ready in under an hour!

Ingredients
  

  • 24 oz salted butter softened to room temperature
  • 7 roasted garlic cloves
  • olive oil for roasting
  • salt and pepper
  • 1-2 packets fresh rosemary chopped
  • 1-2 packets fresh thyme chopped
  • 1 packet fresh chives chopped

Instructions
 

  • Preheat oven to 350°F. Place garlic cloves in foil, season with salt and pepper, and generously drizzle with olive oil. Wrap and roast for 40 minutes until soft and golden.
  • Remove garlic from oven and let cool slightly. Finely chop the roasted garlic and all fresh herbs.
  • Add the chopped herbs and roasted garlic to the softened butter. Mix until everything is evenly incorporated throughout the butter.
  • Use immediately or store in the refrigerator for up to 3 days. Let come to room temperature before serving for easy spreading.

Notes

For longer storage, freeze the herb butter in portions for up to 3 months.
You can shape the butter into a log using parchment paper and slice into rounds for serving.
Adjust herb quantities to your taste—start with less if you prefer milder flavor.
